With their beginnings in milling flour, polishing rice, and producing noodles, the Shichida family have spent many generations working with the abundant natural resources of Saga Prefecture. In 1875, the Shichida Family established the Tenzan Saké brewery and have since streamlined their efforts to focus solely on brewing saké. Tenzan Saké Brewery aims to brew the highest quality saké using the best quality rice. They work closely with their rice suppliers, as they strongly believe saké is a joint creation of the brewers and the rice farmers.

Tenzan Saké Brewery is situated where the waters flow from the picturesque Mount Tenzan into the Gion River. The groundwater supply from Mount Tenzan is famous for its hardness and unique minerality. The Shichida Family’s expertise and understanding of the water in the region has allowed them to create their exquisite sakés. The Gion River is one of the top spots to watch the fireflies dance in the summer. As fireflies only dwell near the cleanest waters, it is a testament to the purity of the water used by the brewery .
Tenzan Saké Brewery is constantly growing and developing new ways to ensure the freshness of flavour. The brewery is nationally and internationally acclaimed for both its Tenzan and Shichida lines of Saké.

About Tama no Hikari
Established in 1673, Tama No Hikari Saké Brewery has spent 13 generations perfecting saké that is produced with traditional methods. They are dedicated to the craft of Junmai, a term for saké produced from only rice, water and koji. As the first to revive the Junmai style in 1964, Tama No Hikari remains a leader in the industry. Junmai-only production is a labour and cost-intensive commitment. However, they believe this centuries-long tradition of making saké is the way to achieve the true character of the saké.

With few ingredients in their saké, Tama no Hikari is dedicated to using only the most premium rice varieties: Bizen-Omachi and Yamada Nishiki. Both varieties are regarded as the best for making saké. The brewery polishes their own rice, utilizing the ‘henpei’ technique which polishes the grain flat in order to preserve a larger amount of inner core of starch. Located in the ancient capital area of Kyoto, Tama no Hikari is blessed with fresh groundwater, ideal for producing quality saké.

About Kita no Homare
KITA NO HOMARE is a saké made on Hokkaïdo island by the famous saké brewery of the same name located in the harbourish city Oratu, 30 km from Sapporo.
This saké is brewed with the Okusawa stream water and high quality rice. It is a Junmai-Daiginjo, meaning the highest rice polishing grade.

About Yoshi no Gawa Saké Brewery
Located in Niigata, the renowned saké brewing prefecture, Yoshi no Gawa Saké Brewery is the oldest in the region, and 5th oldest brewery in Japan. Perfecting their craft over 20 generations, they are dedicated to combining centuries-old knowledge and techniques with new innovations.

Yoshi no Gawa was established in 1548 when Mondo Kawakami resigned as a samurai and began brewing saké in the Settaya region. This region has a long history of saké and fermentation, being blessed with an abundance of pure, fresh water, and high quality rice. Melted snow from the Nagaoka Mountain Range mixes with water from Japan’s largest river, Shinano, to create a clean, soft water with a perfect balance of minerals. Yoshi no Gawa accesses this refined water source from an underground spring on the brewery grounds. Committing to the traditional cycles of brewing saké in the winter and harvesting the rice in the summer, the rice Yoshi no Gawa brews it saké with is cultivated by the brewers themselves. This integrative approach allows the brewers to use their extensive knowledge of the role of rice in saké-brewing to harvest a high-quality rice known as the ‘kurabito saibaimai’, or brewer’s rice. These ingredients are brought together by highly skilled brewers in the brewery (‘kura’) that is both historical and innovative.
For over 470 years, traditional skills have been passed down to each skilled brewmaster. Yoshi no Gawa prides themselves on preserving tradition while incorporating leading-edge technologies to brew saké brewed from the finest ingredients.

Yoshida Saké Brewery
Established in 1743, Yoshida Saké Brewery is located in Yasugi City in Shimane Prefecture. Shimane is considered the birthplace of saké from its extensive history dating back to ancient times. Shimane saké is a reflection of proud traditions passed on from generation to generation. During the Warring States Period (1396-1566), the best saké of each year was presented to the Lord of the Toda Castle. This saké was known as ‘Gassan’. Aiming to produce only the best quality saké, the quality they would be proud to present to a Lord, Yoshida Saké Brewery has named their saké ‘Gassan’.

The water that Yoshida Saké Brewery uses is the softest water in Japan. It is also recognized as one of the 100 best waters in Japan. The brewery is dedicated to using the softest local water to respect the deep history of the region and bring out the complex aromas and tastes of the saké. Using the top quality rice in the Hirose region, a significant portion of the rice is polished away to ensure the purest tasting saké.

Kojima Sohonten Saké Brewery
Kojima Sohonten has been brewing saké since 1597 in Yonezawa, Yamagata. The brewery family has a long rich history with close relationships to the Uesugi Samurai clan, the famous feudal lords of the Yonezawa area. During the time of the prohibition of saké, Toko was granted a rare, formal exception to continue brewing, becoming the exclusive supplier to the Uesugi clan.

Kojima Sohonten is situated east of the venerable Yonezawa castle, giving it the name of ‘Saké of the Rising Sun’ (‘Toko’). The surrounding topographical features of the remarkable Mount Azuma and the Mogami River, known as the ‘Mother River’ of the Yamagata Prefecture, provide the brewery with clean, soft water.
Toko Saké presents a culturally rich and refined experience. Extending over 23 generations of production, the brewery has worked hard to pursue first-class quality with an emphasis on craftsmanship and quality natural ingredients.
