About Nakano Saké Brewery

Nakano Saké Brewery continuously focuses on improving quality by using cutting edge technology in their saké production. In the past, human intuition and experience were heavily relied on to adjust and control temperature and moisture levels throughout the brewing process. Nakano has developed technological innovations that allow the  brewmasters to focus more on the processes that require traditional hands-on craftsmanship. By merging technology that helps eliminate inconsistencies in the brewing process with time-tested traditional techniques, Nakano is able to create a consistently high-quality product.

Harnessing the benefits of the local, rich agricultural land, Nakano Saké Brewery has developed over 16 acres of Ume Plum farms on their estate. With over 3,300 plum trees, they grow some of the most iconic, premium varieties. Staying true to their commitment to creating high-quality products, they carefully cultivate the plums to offer a variety of plum wines that are internationally acclaimed.
