Yoshida Saké Brewery

Established in 1743, Yoshida Saké Brewery is located in Yasugi City in Shimane Prefecture. Shimane is considered the birthplace of saké from its extensive history dating back to ancient times. Shimane saké is a reflection of proud traditions passed on from generation to generation. During the Warring States Period (1396-1566), the best saké of each year was presented to the Lord of the Toda Castle. This saké was known as ‘Gassan’. Aiming to produce only the best quality saké, the quality they would be proud to present to a Lord, Yoshida Saké Brewery has named their saké ‘Gassan’.

The water that Yoshida Saké Brewery uses is the softest water in Japan. It is also recognized as one of the 100 best waters in Japan. The brewery is dedicated to using the softest local water to respect the deep history of the region and bring out the complex aromas and tastes of the saké. Using the top quality rice in the Hirose region, a significant portion of the rice is polished away to ensure the purest tasting saké.
