About Oku no Matsu Brewing
The brewery is located in Nihonmatsu which provides the perfect natural environment for saké brewing. Mt. Adtara blesses the region with pure, clean water. The snow that falls on the mountain takes 40 years to trickle down into ground water, and provides the ideal balance of minerals for saké brewing. The harmony of the water, rice, climate, and superior craft of the brewmasters creates Oku no Matsu’s truly exceptional saké.
Oku no Matsu continues to maintain tradition while still innovating to provide saké with unique qualities and flavours. They have invented techniques such as their Pasteurizer, which pasteurizes the saké after bottling and designed a new cap to withstand pressures to lock in flavours and aromas. They are constantly innovating within the industry with cutting-edge technology and ideas.
Their innovative work in creating a consistently high quality saké has been recognized through their numerous awards including a gold medal in the National New Saké Tasting Competition and the Grand Champion Saké from the International Wine Challenge.
