About "Dassai" Saké

Asahi Shuzo Sake Brewery has spent years carefully innovating their craft to become one of the most unique saké producers in Japan. By combining labour-intensive hand-crafted methods that have been proven over centuries with the most modern technology at the right times, they have created a saké like no other.

Through these methods, Asahi Shuzo has refined their craft to produce their saké all year-round. This allows a steady, even flow in production that minimizes variables. Their innovation and creativity has distinguished them as true leaders in the industry. 

In pursuit of creating the very best saké, they begin with the highest quality rice, the Yamada Nishiki varietal. They carefully polish away the outer part of the grain, leaving only the fermentable starch. This is fermented with the local, clear water from the mountains of Yamaguchi Prefecture. The brewmaster brings these exceptional ingredients together to create the elegant flavour profile of Dassai.
